Man’s intervention is limited to the facilitation of phonological processes, following the schedule set by Mother Nature. The vines, with a density of 4000 per hectare, are grown with the Guyot system and derive their nutrients from a soil with a calcareous-clayey texture. The exposure is to the west. The modus operandi is organic.

Harvest and Vinification: 

The oenological objectives make the harvest period particularly important in order to work in the cellar only the best and most suitable grapes for the evolution over time of the resulting wine-product. The production process, with a careful dosage of sulfites, requires an optimal quality of grapes. The choice, for this fine Croatina, fell on the use of selected yeasts, evaluated following the search for precise oenological characteristics.


For the refinement, French Allier oak barriques were chosen, famous for the fine grain of the wood, the low porosity and the release of vanilla notes particularly suitable for enhancing the product considered here. The aging time lasts 12 months and culminates in the bottle until the moment of consumption.

Taste  Experience:

A bewitching display of aromas. The color is deep ruby red with a purple tear. Clear, aerial waves of wild berries immediately envelop the nose, with black currant and blackberry chasing each other in a game of scents in which ginger, black pepper, marjoram, wood licorice also participate.

On the palate it is vertical, clean, with lively, vital, well-ripened tannin, which gives the wine that almond note that accompanies it to the finish. At the same time, the licorice that was just hinted at the nose is more marked and unmistakable, to bring back to a pleasantly carousel closure on bitter tones.
